  • 1 ripe mango, peeled and cut into cubes
  • Juice of 1 orange

Instructions

Prep Time: 40 minutes , Chilling Time: 2 hours

  1. In a saucepan, heat the non-dairy milk to a soft boil.
  2. Place the tea bags in a heat-safe dish and pour the hot milk on top.
  3. Steep for ~10 minutes, then place in the refrigerator to cool for 20 minutes.
  4. Remove the milk from the fridge and whisk in the remaining ingredients.
  5. Make the mango purée by combining the mango and orange juice in a food processor or blender and blend until smooth.
  6. Chill in the refrigerator for at least 2 hours (or overnight for best results.)
  7. Put a layer of the chia seed pudding on the bottom of 6 x 4oz ramekins (or vessel of choice)
  8. Add a layer of the mango purée on top of the chia pudding then continue alternating layers to fill the ramekin. Add more layers such as nonfat Greek yogurt or cottage cheese if you so desire!
