Frozen Teeccino Blended Frappe

The secret to a great iced Teeccino is to brew it very strong. Then the dilution from ice and milk won't drown out those lovely roasted notes from Teeccino. This recipe calls for brewing Teeccino using twice the amount as normal to make a strongly flavored liquid that can be frozen in ice trays. Think of them when a hot day starts to get you down and you'll be ready to make this frozen frapp in no time at all!

Instructions

  • Using ice cube tray, create frozen cubes of both the brewed Teeccino and milk / soy milk

Alice Foote MacDougall Eggnog

Eggnog is such a holiday treat. If you would like to make eggnog from scratch, here is our family secret: my great-grandmothers classic eggnog recipe uses only farm fresh, free range, brown eggs and brown sugar.
The story goes, Alice Foote MacDougall was only willing to part with her secret eggnog recipe on her death bed. Her dear friend, who had been asking for it for years, went home to make it, but came back complaining that her eggnog didn't taste nearly as good as Alice's. After protesting that she had shared the whole recipe and going through each step to make it, my great granny inquired, What color eggs did you use?. Well, white eggs, came the reply. You must only use brown eggs! Alice commanded.

Ingredients

  • 12 brown eggs from free range chickens
  • 1 quart milk organic preferably
  • 1 1/2 quarts Half & Half organic preferably
  • 1 lb brown sugar
  • 1 tsp salt
  • 1 pinch Cream of Tartar
  • 1 tbsp nutmeg
  • 7 oz brandy
  • 7 oz dark rum

Instructions

  • Break eggs and divide by putting the yolks in a large bowl and the whites in smaller bowl. be very careful to make sure you don't get any yolks in the egg whites bowl as that will keep them from frothing correctly.
  • Add the sugar a bit at a time while beating with an electric mixer.
  • Add salt.
  • Pour the brandy and then the rum down the side of the bowl while beating them into the egg and sugar mixture.
  • Add the milk and the cream, beating until perfectly smooth.
  • Add a pinch of Cream of Tartar to the egg whites.
  • Beat the egg whites in their bowl until you can make little stiff peaks with the froth.
  • With a large spoon, carefully fold in the egg white froth into the large bowl by scooping the eggnog mixture over the froth. Allow some of the froth to stay on the surface. Don't mix too much so the frothy whites keep the eggnog light.
  • Sprinkle nutmeg on top of the eggnog.
  • With a ladle, scoop into small cups and serve your guests.

  • 1 15oz can sliced peaches in lite syrup
  • 3 8oz cups Teeccino French Roast, Java or Original
  • 1/2 cup whipping cream
  • 1 1/2 tbsp brown or raw sugar

  • 2 tsp finely grated fresh ginger use ginger powder for best flavor

Instructions

  • Brew Teeccino using 4 rounded tablespoons per 8 cups water in a drip coffee maker or 1 tablespoon per 10 oz water in a French Press.
  • Pour the brewed Teeccino into a blender or Vitamix
  • Blend the peaches with their liquid with the brewed Teeccino until pureed fully.
  • Strain the liquid through a wire mess strainer into a pot.
  • Add honey, fresh or dried ginger, and cinnamon. Stir well with a wire whisk over medium heat until honey and spices are fully mixed in and the liquid is hot but not simmering.
  • Pour the Ginger Peach Teeccino into 4 mugs. Top with whipped cream
  • Mix 1/2 tsp ginger powder with 1 tsp sugar and sprinkle over top of the whipped cream

Vietnamese Iced Herbal Coffee

Inspired by the lack of fresh milk in the tropics, Vietnamese Iced Coffee was created when the French brought coffee to Vietnam during the colonial era in the late 1900s. Made with ultra thick and creamy condensed milk that can survive tropical heat without refrigeration, Vietnamese iced coffee is typically enjoyed rich and sweet. It has a thick mouthfeel that is the signature difference between it and simply sweetened iced coffee. The French traditionally combined chicory with coffee which gave Vietnamese Iced Coffee an even darker roasted body.

  • 4 tbsp milk or half and half
  • Non-caloric sweetner like Z-Sweet or Stevia if you plan to use unsweetened evaporated milk

Instructions

  • Follow the directions for making iced Teeccino.
  • Pour the chilled Teeccino over ice in a tall glass.
  • Add 2-3 tbsp of condensed milk. Condensed milk is sweetened with sugar. See step 6 for a lower calorie version.
  • Add 3 or 4 tbsp milk or half & half to taste.
  • Stir to mix thoroughly and enjoy!
  • For a lower calorie version: add 1/4 cup evaporated milk instead of condensed milk. Sweeten with Z-sweet or Stevia to preference and stir. You'll save upwards of 100 calories!
  • For a non-dairy version: use Coconut Cream. There are both sweetened and unsweetened version that will give you that thick, creamy mouthfeel that is the signature of Vietnamese Iced Coffee!

  • 8 tbsp pumpkin puree from a can

Instructions

  • Brew 6 cups of Teeccino pumpkin Spice in your drip coffee maker using 4 Tbsp of Teeccino. Or add 4 Tbsp of Teeccino to 30 oz of boiling water in a French Press Pot.
  • Put 1 cup of cold milk or non-dairy alternative into a blender and add 8 Tbsp of pumpkin puree and 3 Tbsp of maple syrup. Blend until smooth.
  • Put the blended milk and pumpkin into a saucepan large enough to hold both the Teeccino and the milk.
  • Heat the milk and add the hot brewed Teeccino to the saucepan. Mix well with a wooden spoon.
  • Test for sweetness. Add more maple syrup if more sweetness is desired.
  • Pour the milk and Teeccino mixture from the saucepan into 4-5 mugs.
  • Top each mug with frothed milk or whipped cream and enjoy!

Cranberry Apple Gluten-free Vegetarian Stuffing with TeeChia

Stuffing is my favorite Thanksgiving dish. Combined with gravy, it makes everyones mouth water, dont you agree? Since Im not a turkey eater though, I specialize in making vegetarian stuffing that tastes as rich and savory as any stuffing baked in a turkey. This year, in honor of free from dietary needs, I decided to make my stuffing gluten-free which can be easily accomplished by using corn bread croutons instead of wheat bread. Except corn bread doesnt stick together since its missing wheats gluten. The normal solution would be to add eggs but they arent vegan and they also dont add any interesting flavor or texture to the stuffing. Lets face it, corn bread has to be enhanced or it could be quite boring! That started me thinking about all the delicious flavors TeeChia Cranberry Apple would bring to a stuffing recipe and the solution was clear. TeeChias chia, flax, quinoa, amaranth, ramn and pumpkin seeds would create the perfect texture combined with crispy corn bread croutons, and set the flavor theme for this years stuffing. Wow! I made it last night to make sure it would come out like I want on Thanksgiving and it is fabulous! Now with a little cashew & shitake gravypoured over the topTOTAL YUM! I whipped this stuffing up in a half hour or less after sending my husband off to Whole Foods to buy some cornbread stuffing. He brought home a package of Glutino Cornbread Gluten-Free Stuffing just what I wanted. House guests kept me busy so I didnt read the ingredients until this morning as I wrote this blog. So heres the good news and the bad news. Glutino has done a great job of making crispy flavorful cornbread croutons that are absolutely perfect for stuffing. Keep in mind, they use egg whites so theyre not vegan. However, when I looked closely at the ingredient list, I realized that the corn starch they use (why didnt they use cornmeal?) isnt organic and thus the Glutino Corn Bread Stuffing contains GMOs. I was bummed! It was so easy to make sigh! However, if you want to avoid GMOs for Thanksgiving, youre going to have to make your own cornbread ahead of time and then crisp up some croutons in the oven. Its actually a lot easier than you may think and Ive included a recipe for GMO-free and gluten-free cornbread croutons using Pamelas Cornbread & Muffin Mix made with organic cornmeal. I leave it to you to decide for yourself which one you want to serve your family and guests this Thanksgiving.

Ingredients

  • 3 cups flour we used wheat
  • 4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk Vegan option – use non-dairy milk
  • 1 cup brewed Teeccino Dandelion Coconut allow to cool to at least lukewarm
  • 1/2 cup butter Vegan option – vegan butter alternative
  • 4 eggs Vegan option – you may also use flax eggs. To make a flax egg, mix one tablespoon ground flaxseed meal with three tablespoons of water. Mix together, and let sit in your fridge for 15 minutes to set up and thicken.

TOPPINGS

  • Butter
  • Maple syrup
  • Fresh berries

Instructions

  • Beat yolks well.
  • Add sifted dry ingredients and milk alternately to the yolks, mixing with a spoon.
  • Melt the butter and add to the batter
  • Lastly, fold in the stiffly beaten whites, carefully so the batter stays light and fluffy.
  • Cook per your waffle iron’s instructions.
  • Enjoy with all of your favorite toppings! We chose to use butter, organic maple syrup and fresh berries.
