CJ's TeeChia Energy Balls

Created by CJ Jackson, Ph. D and Certified Master Herbalist, these delicious TeeChia Energy Balls are packed with goodness and covered in Certified Organic Dark Chocolate. These decadent treats can be enjoyed by people of all ages for any sweet occasion!

Ingredients

Energy Ball Ingredients:

  • 1 cup TeeChia
  • 1/4 cup Spring Water
  • 6 pitted Medjool Dates
  • 1/2 cup Walnuts
  • 1/2 cup Almonds
  • 1/2 Tbsp Eleuthero Powder
  • 1 Tbsp Organic Wheatgrass Powder
  • 1 Tbsp Organic Spirulina Powder
  • 1 Tbsp Organic Honey Agave Nectar or Pure Raw Maple Syrup

Icing Ingredients:

  • 3 oz Organic Pure Unsweetened Cacao Paste I got mine from NutsOnline.com
  • 1 1/2 Tbsp Organic Honey Agave Nectar or Pure Raw Maple Syrup
  • 1 tsp Organic Vanilla
  • 2 Tbsp Organic Coconut Oil

Instructions

Energy Ball Directions:

  • Activate Teechia by folding in water slowly.
  • Mix Teechia mixture in a food processor with all other ingredients. Pulse until all ingredients are blended thoroughly.
  • Roll in to small ball (you should be able to get 16 small balls out of this mixture)
  • Place balls on a plate covered with wax paper and place in the freezer.

Icing Directions:

  • Grate cacao paste down (it comes in a bricand place in a double boiler over medium low heat.
  • Melt cacao paste down and slowly stir in remaining ingredients.
  • Either dip energy balls in cacao mixture or pour it over the energy balls.
  • Place in freezer for 10 minutes.
  • Place Energy Balls in a sealed container and they will keep in the refrigerator for 1 week.

Ingredients

  • 1 cup Teechia Blueberry Date
  • 10-12 dates pitted (Deglet Noor work best)
  • 1/2 cup walnuts or pecans or pumpkin seeds
  • 1/2 cup currants blueberries or raisins
  • 1/4 cup cocoa powder optional coating
  • 1/4 cup sesame seeds optional coating
  • 1/4 cup shredded coconut optional coating

Instructions

  • Soak the pitted dates in 1/4 cup hot water in a small bowl.
  • Mash the dates into the hot water with a fork.
  • In a food processor (some blenders may work too), grind up the nuts or pumpkin seeds until they are small, diced pieces
  • Add the TeeChia and blend well.
  • Add the dates with the water they were soaked in.
  • Add the dried fruit.
  • Blend well until a lump or ball forms.
  • Put the cocoa powder, coconut, and/or sesame seeds on individual plates.
  • Using a tablespoon, scoop up some of the TeeChia mixture and form into a ball.
  • Roll the ball around on one of the optional coatings until it is completely covered.
  • Place on a plate to serve or store in an air-tight container. May be refrigerated for storage up to several weeks.

Notes

Makes 12-15 balls depending on how large or small you desire them to be.

Detox Dandelion Turmeric Bites

These Detox Dandelion Turmeric Bites are a delicious and guilt-free way to satisfy your sweet tooth. Not to mention, these little power bites deliver natural energy, anti-inflammatory turmeric plus lauric acid and healthy fats from coconut manna. A no-bake recipe, these are easy to make & even easier to eat. Enjoy!

Ingredients

  • We made two different versions of these yummy little treats. We used Nutiva’s Almond Coconut Mana for one and Nutiva’s Chocolate Coconut Mana for the other. We loved both and highly recommend trying out both as well!

ALMOND FLAVOR INGREDIENTS

  • 1 cup Nutiva’s Almond Coconut Manna
  • 1 1/2 cup shredded coconut plus 1 tablespoon extra for topping
  • 1 tbsp brewed Teeccino Dandelion Turmeric
  • 2 tsp Turmeric
  • 1/2 tsp cinnamon
  • Pinch of black pepper
  • 1 tbsp honey

CHOCOLATE FLAVOR INGREDIENTS

  • 1 cup Nutiva’s Chocolate Coconut Manna
  • 1 1/2 cup shredded coconut
  • 1 tbsp brewed Teeccino Dandelion Turmeric
  • 2 tsp Turmeric
  • 1/2 tsp cinnamon
  • Pinch of black pepper
  • 1 tbsp honey

Optional: Handful of crushed nuts for topping

    Instructions

    • Add softened coconut mana (make sure it is soft but not fully liquiand shredded coconut to a mixing bowl and stir well to combine.
    • Add the remaining ingredients and stir well.
    • Using your hands, roll the dough into balls about 1.5″ in diameter and place on a plate lined with parchment paper.
    • For the almond flavor, sprinkle a bit of coconut shreds on top of the balls. For the chocolate flavor, we used crushed peanuts (you can use your favorite nut, or skip this steto achieve a peanut-butter chocolate flavor.
    • Put bites into the fridge for 30 minutes to firm up.
    • Remove from the fridge and enjoy!

    Notes

    Note: These can also be saved for up to a week in your fridge in an airtight container. We even saved a few in the freezer for “emergency sweets”!
