Creme de Menthe Chocolate Cooler

Lay back, chill out, and relax with this deliciously minty libation. Made simply with Teeccino Chocolate Mint and Créme De Menthe liqueur, this cooler is the perfect end to a dinner party. The perfect blend of sweetness and mint lends itself to this delightfully cool drink. Complete with light foam and hints of chocolate, this Créme De Menthe Chocolate Cooler is sure to be a favorite among all!

Ingredients

  • 2 rounded tbsp of Teeccino Chocolate Mint
  • 4 oz whole milk for foaming (try almond soy or coconut milk as non-dairy alternatives
  • 3 to 4 oz of Créme De Menthe liqueur optional: 2 drops of Peppermint Oil with preferred sweetener
  • A handful of mint leaves for decoration

Instructions

  • Put Teeccino grounds into the filter of a drip coffee maker or into a French Press
  • Brew Teeccino using 4 cups of water in a drip coffee maker or 2 x 10 oz cups of water in a French press
  • Add Créme De Menthe liqueur (optional)
  • Add frothed milk or non-dairy milk (We added only foam, but milk can be added to the liquid to mix if desired)
  • Place a small mint leaf in the foam (for presentation)
  • Makes 2 servings

Alice Foote MacDougall Eggnog

Eggnog is such a holiday treat. If you would like to make eggnog from scratch, here is our family secret: my great-grandmother’s classic eggnog recipe uses only farm fresh, free range, brown eggs and brown sugar. The story goes, Alice Foote MacDougall was only willing to part with her secret eggnog recipe on her death bed. Her dear friend, who had been asking for it for years, went home to make it, but came back complaining that her eggnog didn’t taste nearly as good as Alice’s. After protesting that she had shared the whole recipe and going through each step to make it, my great granny inquired, “What color eggs did you use?”. “Well, white eggs,” came the reply. “You must only use brown eggs!” Alice commanded.

Ingredients

  • 12 brown eggs from free range chickens
  • 1 quart milk organic preferably
  • 1 1/2 quarts Half & Half organic preferably
  • ¾ lb brown sugar
  • ½ tsp salt
  • Pinch of Cream of Tartar
  • 1 tbsp nutmeg
  • 7 oz brandy
  • 7 oz dark rum

Instructions

  • Break eggs and divide by putting the yolks in a large bowl and the whites in smaller bowl. Be very careful to make sure you don’t get any yolks in the egg whites bowl as that will keep them from frothing correctly.
  • Add the sugar a bit at a time while beating with an electric mixer.
  • Add salt.
  • Pour the brandy and then the rum down the side of the bowl while beating them into the egg and sugar mixture.
  • Add the milk and the cream, beating until perfectly smooth.
  • Add a pinch of Cream of Tartar to the egg whites.
  • Beat the egg whites in their bowl until you can make little stiff peaks with the froth.
  • With a large spoon, carefully fold in the egg white froth into the large bowl by scooping the eggnog mixture over the froth. Allow some of the froth to stay on the surface. Don’t mix too much so the frothy whites keep the eggnog light.
  • Sprinkle nutmeg on the top of the eggnog.
  • With a ladle, scoop into small cups and serve your guests. Makes approximately 3 ½ quarts to serve around 18 x 6 oz servings.

Kahlua Teeccino Chocolate Martini

Guatemalan roasted ramón seeds, New World cocoa beans and Mexican Kahlua® meet each other in this Teeccini. Powered by Peruvian maca, the Incans’ energizing tuber, with a hint of heat from chiles, they produce a sublime experience. Easy to serve at parties. Simply scale up the recipe, mix everything ahead of time in a pitcher or large jar. Then shake it with ice and serve your guests. Can be served with or without whipped cream on top.

  • 1 oz Kahlua®
  • 1 oz vodka
  • 2 oz brewed Maca Chocolaté Teeccino chilled
  • 1/2 oz Godiva® dark chocolate liqueur
  • Whipped cream or non-dairy alternative if desired
  • Cocoa powder for dusting
  • Note: Vegans should use De Kuyper’s Chocolate Liqueur instead of Godiva’s which contains dairy.

Instructions

  • Fill martini shaker with ice
  • Add Kahlua, vodka, chillled Teeccino & chocolate liqueur to shaker.
  • Shake, strain and serve in chilled martini glass
  • Top with whipped cream or non-dairy whipped cream if desired.
  • Dust cocoa powder over the whipped cream

Teeccino Chocolate Mint Martini

Refreshingly cool with just the right balance of sweet and dark flavor notes. The flavor of vodka is so understated, but be careful, as these Chocolate Mint “Teeccinis” go down very easily! Simple to serve at parties, just multiply the recipe, and mix everything ahead of time in a pitcher or large jar. Then shake it James Bond style with ice, and serve your guests!

Ingredients

  • 1 1/2 oz vanilla vodka
  • 1 oz chocolate liqueur we recommend Godiva®
  • 2 oz brewed Chocolate Mint Teeccino Herbal Coffee chilled
  • Chocolate shavings white or dark – simply grate a chocolate bar with a fine grater onto a dish
  • Orange juice – just enough to fill a small saucer
  • Small sprig of fresh mint for garnish – 1 for each cocktail

Instructions

  • Dip rim of martini glass in orange juice, then dip glass into chocolate shavings
  • Fill martini shaker with ice
  • Add vodka, chocolate liqueur and cooled Teeccino to martini shaker
  • Shake mixture and pour into martini glass
  • Embellish with a sprig of mint to the side of the glass

  • 1 oz Frangelico® liquor adds 103 calories
  • 4 oz hot milk or non-dairy milk – froth to top with foam if used without other options
  • Whipped cream flavored with maple syrup and vanilla extract optional
  • Scoop of Ice Cream optional
  • Sprinkle cocoa powder on top optional

Instructions

  • In a 12 oz mug, mix the brewed Teeccino and liqueur. If you desire less calories, use 1/2 oz instead of 1 oz of Frangelico®.
  • Add the hot milk or non-dairy milk.
  • Top with your choice of the optional toppings. For those desiring a light calorie beverage, stick with just the cocoa powder and use 2% milk!
