Who doesn’t love Snickerdoodle cookies? Known for their sweet tangy flavor and glistening cinnamon sugar crust, Snickerdoodles have been a family favorite for generations. Although the origin of the Snickerdoodle is not exactly known, these simple and delicious cookies have proven to be a timeless classic that can be enjoyed puffy and fat, or svelte and chewy. They can be soft or crisp, or light and pillowy. You can achieve different results by making slight adjustments to the ingredients, such as substituting with gluten-free flours and unprocessed sugar alternatives. However, the key ingredient that perfects the Snickerdoodle cookie is the cream of tartar, imparting the cookies’ characteristic tanginess and also adding to their chewiness and crinkliness. You can also achieve that tang by using white vinegar or lemon juice although sacrificing the cookie’s distinctive cracked surface. These cookies are easy to make, require few ingredients, and require no chilling time in the fridge. The addition of Teeccino Snickerdoodle will tint the cookies while adding an extra layer of Snickerdoodle goodness!

Ingredients

  • ¼ cup Pamela’s Artisan Gluten-Free flour blend
  • ¼ cup almond flour
  • 1 tsp vanilla extract
  • 6 tbsp granular Monk fruit sugar (or any 1:1 no-calorie sweetener)
  • 6 tbsp unsalted butter, room temperature
  • 1 large egg
  • ½ tsp cinnamon
  • ¼ tsp kosher salt
  • ¼ tsp baking soda
  • ¼ tsp cream of tartar
  • 1 tsp [Teeccino Snickerdoodle Chicory Herbal Coffee], finely ground in a spice grinder

Cinnamon-Sugar Mixture:

  • 2 tbsp sugar or no-calorie sweetener
  • 1 ½ tsp cinnamon
  • 1 tsp finely ground Teeccino Snickerdoodle

Prep Time: 15 Minutes , Cook Time: 10-12 Minutes , Calories per serving: 90

  1. Preheat the oven to 350 degrees.
  2. In a large mixing bowl, cream butter and sugar until light and fluffy.
  3. Add the egg and vanilla extract and beat until combined.
  4. Combine flour, cream of tartar, baking soda, and salt, and add to butter mixture; mix until a fluffy dough is formed.
  5. In a shallow dish, mix together sugar, cinnamon, and Teeccino grounds; set aside.
  6. Roll the dough into 1 oz (2 tbsps/24 g) balls and drop them into the cinnamon-sugar mixture; roll to coat.
  7. Place dough balls onto a parchment paper-lined baking sheet, spaced 2 inches apart and flatten. These cookies will not spread but will expand slightly.
  8. Bake for 10-12 minutes, rotating the pan halfway through. Let cool for several minutes on the baking sheet before removing from the pan.
