Italian Peach Pudding with Almond Amaretto Syrup

Ingredients

  • 2 cups brewed [Almond Amaretto Chicory Herbal Coffee]
  • 1 1/2 cups palm sugar
  • 1/4 tsp almond extract
  • 2 peaches or bananas (if peaches are out of season) very ripe, chopped
  • 12 pieces panettone or brioche bread torn into chunks
  • 4 eggs
  • 1 cup cream or non-dairy creamer
  • 1 cup milk or non-dairy alternative
  • 1 tbsp vanilla extract
  • 2 tbsp superfine palm sugar

Simple Syrup

  1. Place brewed Teeccino Almond Amaretto, 1 1/2 cups palm sugar and almond extract in a small saucepan.
  2. Bring to boil for 10-15 minutes while stirring occasionally.
  3. Remove from heat when the liquid has thickened to syrup consistency.

Peach Pudding

  1. Grease 4 cappuccino or dessert cups with butter
  2. Layer peaches / bananas alternating with panettone / brioche in cups
  3. Mix eggs, cream, milk, vanilla and superfine palm sugar in a bowl
  4. Pour mixture equally into the 4 cappuccino cups
  5. Sprinkle top of each cup with palm sugar
  6. Allow mixtures to stand for 5 minutes
  7. Place cups in a baking dish and fill dish with water until halfway up the sides of the cups
  8. Bake in oven for 35-40 minutes, or until puddings are firm
  9. To serve, place cups on saucers and drizzle with the previously prepared simple syrup
