You have to see it to believe it! This cake is made without ANY added sugars and will still satisfy any level of sweet tooth! The secret is the fresh berries, the pure pomegranate juice, and the irresistible frosting made exclusively of dates! Skip the refined sugar and use up those berries you have leftover from the market. Enjoy this sweet, refreshing, and all-natural berry cake with an iced glass of Teeccino Herbal Tea out on the patio!
Ingredients
- 1 cup coconut oil
- 1 cup walnut pieces
- 1 cup dried blueberries (dried strawberries also work well)
- 2 cups [TeeChia Blueberry Date Super Seed Cereal]
- 3 cups fresh berries (blueberries, strawberries, raspberries, blackberries)
- 1 ½ cups unsweetened Pom pomegranate (or blueberry juice)
- ½ tsp salt
- 1 tbsp vanilla extract
- 2 ½ cups gluten-free flour (Pamela’s Artisan Blend® All-Purpose)
- 1 tbsp baking soda
- 1 tbsp baking powder
- ½ lb pitted Medjool dates

- Preheat the oven to 350°F
- Grease and dust two 8” round cake pans or a rectangular pyrex baking dish.
- Melt coconut oil in the microwave in a heat-proof bowl or glass pyrex measuring cup.
- Soak the TeeChia in 1 ½ cups of Pomegranate juice until it is thoroughly saturated.
- Cover the dried blueberries/strawberries in hot water and soak for a few minutes to rehydrate them. Drain, but reserve the liquid.
- In a food processor, pulse the berries, coconut oil, TeeChia, walnuts, and vanilla. Don’t completely blend so the chopped fruit pieces can still be seen.
- In a large bowl, sift together the flour, baking powder, baking soda and salt.
- Add the berry mixture to the dry ingredients and mix until just combined.
- Pour the batter into the pan or pans and pat into shape so the top is smooth.
- Bake for 50-60 minutes or until a cake tester comes out clean when inserted into the center.
- Remove it from the oven and cool in the pans while you make the frosting
Frosting:
- In a clean food processor, combine the pitted dates and dried berry liquid and blend until it becomes a smooth frosting consistency. Add a little more boiling water, if needed, to maintain consistency.
- If using two layers, spread the date icing between the layers and top with the remaining icing.
- Decorate with more fresh berries and whipped cream as you like!
