  1. Preheat the oven to 350°F
  2. Grease and dust two 8” round cake pans or a rectangular pyrex baking dish.
  3. Melt coconut oil in the microwave in a heat-proof bowl or glass pyrex measuring cup.
  4. Soak the TeeChia in 1 ½ cups of Pomegranate juice until it is thoroughly saturated.
  5. Cover the dried blueberries/strawberries in hot water and soak for a few minutes to rehydrate them. Drain, but reserve the liquid.
  6. In a food processor, pulse the berries, coconut oil, TeeChia, walnuts, and vanilla. Don’t completely blend so the chopped fruit pieces can still be seen.
  7. In a large bowl, sift together the flour, baking powder, baking soda and salt.
  8. Add the berry mixture to the dry ingredients and mix until just combined.
  9. Pour the batter into the pan or pans and pat into shape so the top is smooth.
  10. Bake for 50-60 minutes or until a cake tester comes out clean when inserted into the center.
  11. Remove it from the oven and cool in the pans while you make the frosting

  1. In a clean food processor, combine the pitted dates and dried berry liquid and blend until it becomes a smooth frosting consistency. Add a little more boiling water, if needed, to maintain consistency.
  2. If using two layers, spread the date icing between the layers and top with the remaining icing.
  3. Decorate with more fresh berries and whipped cream as you like!
