Teeccino Pumpkin Chai Almond Latte

We loved this yummy creation from The Nutrition Professor Timaree Hagenburger, a Health Fitness Specialist and Corporate Wellness Professional (http://www.thenutritionprofessor.com). Not only is this drink downright delicious, but it is so easy to make yourself. It’s also free of any additives, and has only 150 calories (compared to 380 calories at a popular coffee chain). You can make it with Teeccino Vanilla Nut or Pumpkin Spice, canned pumpkin, dates and Timaree’s favorite chai spice blend!

Ingredients

  • 1 cup unsweetened vanilla almond milk
  • 3 tbsp pumpkin puree
  • 1 small medjool date
  • 1/2 tsp vanilla extract
  • 1/2-1 cup Teeccino Pumpkin Spice (or certified gluten-free Dandelion Vanilla Nut)
  • ¼ tsp ground cinnamon
  • Pinch of nutmeg, cloves, & ground ginger

Spice Options

  • Option 1: 1/4-1/2 tsp cinnamon plus a pinch of nutmeg, cloves, and ginger
  • Option 2: 1/4-1/2 tsp pumpkin pie spice
  • 1/4-1/2 tsp Chai Spice Blend (see recipe below)

  1. Combine all ingredients in a blender until mixture is completely smooth. Continue blending until warm and enjoy it with Teeccino Vanilla Nut or Pumpkin Spice.

The Nutrition Professors Chai Spice Blend

  1. Combine 1 tsp of each allspice, cardamom, cinnamon, coriander with 1/2 tsp of each black pepper, nutmeg, and turmeric. (This blend is especially wonderful, as the black pepper improves your body's ability to absorb turmeric by as much as 2000%!)
  2. Shop Smart/Prep Smart Tip: While you can cook your own pumpkin, canned pumpkin makes this recipe ready in a flash. Purchase pure pumpkin, not the canned pumpkin pie mix, as that contains sugar syrup and other additives. Since you will only use a few tablespoons for each drink, put the extra pumpkin in ice cube trays, as each should hold ~2 Tablespoons. Once frozen, pop them out into a zip-top freezer bag and they'll be at your fingertips.
